Lukewarm lentil salad

For 2 ppl

150g lentils (puy lentils are best )

100g lardons (or bacon in small chunks)

2 eggs

3 spoons olive oil

1 spoon vinegar

1small spoon mustard

Chives

Parsley

PREPARATION:

Rinse lentils

Put lentils in pan of cold water and bring to boil for 30 mins

Fry or grill lardons

Mix olive oil vinegar mustard with salt and pepper to make vinaigrette

Mix lentils bacon with vinaigrette and add chopped parsley and chives if u want

Add poached eggs

Eat !

A few notes:

I think that you can avoid the mustard and even vinegar if needed

I never had it with chives, usually red onions but the recipes says chives and would be more appropriate

If the bacon is too greasy you could substitute with capers ( still gives saltiness to it) for example
